What is decaf coffee?

How is caffeine removed from coffee?

Swiss Water Process

Green coffee beans are soaked in hot water, which draws out the caffeine and flavour compounds. The water is then passed through a carbon filter that traps caffeine molecules but allows flavour compounds to pass through. The flavour-rich, caffeine-free water is used to soak the next batch of beans — removing caffeine while preserving most of the flavour. This method uses no chemicals and is preferred by specialty coffee roasters.

Solvent-based process

The most common commercial method. Beans are treated with a solvent (typically methylene chloride or ethyl acetate) that bonds with caffeine and removes it. Ethyl acetate is naturally found in fruit, making this method considered more natural. Trace solvent amounts are removed in the roasting process.

CO2 process

Supercritical carbon dioxide is used to selectively extract caffeine while leaving flavour compounds intact. This is the most expensive method and produces the best flavour retention — used for premium decaf products.

Does decaf taste different?

Yes — honestly, most decaf coffee does taste slightly different from its caffeinated equivalent. The decaffeination process inevitably removes some flavour compounds along with the caffeine. Cheaper decaf products compensate poorly for this loss, producing a flat, thin cup.
