Mixed Vegetable Frankie Recipe:
Do you remember what you took to school in your lunch box? Most of us were fussy eaters with small appetites but big demands. Our poor mothers had to come up with innovative ways to feed us vegetables we didn’t like. However, some smart ones knew exactly the trick.

They would spread some ketchup on a roti and add the day’s vegetable, roll it up and stuff it in her kid’s lunchbox. And voilà! The child would come home with an empty box. Those indigenous frankies might not have been a gourmet creation, but they did the trick! And you can’t deny that even now, as grown-ups, you add ketchup to everything to make it tastier, don’t you?

A frankie can be a quick fix for those craving a healthy yet different meal than the boring roti-sabzi and dal-chawal. Moreover, as most of you are pressed for time, due to the lockdown and the work-from-home situation, this recipe can be your go-to for a quick and delicious lunch. All you need is some rotis, some sliced vegetables and Mala’s Tomato Ketchup. It will be ready under 20 minutes and you will be left licking your fingers! Don’t believe us? Read on.

Frankie: Ingredients (makes 4):

  • 1 tomato sliced
  • 2 onions sliced
  • 1 carrot sliced
  • 1 capsicum sliced
  • 1 cup cabbage sliced
  • 1 cup beans sliced
  • 1 tsp black pepper powder
  • 1 tsp garam masala
  • 2 tbsp Mala’s Tomato Ketchup
  • 1 tbsp oil
  • Salt to taste
  • 2 tsp cumin powder
  • 2 tsp chaat masala
  • 4 rotis

Method:
1.Add oil to a pan. Let it heat up and add the onions. Sauté on medium-high heat
2.When they turn translucent, add the sliced capsicum, cabbage, carrots and beans. Sauté on high heat.
3.Season with salt and some black pepp.
4.Cook till they are tender but not over cooke.
5.Now add sliced tomatoes and cook till the tomatoes separate from the oil.
6.Now add the main ingredient: Mala’s Tomato Ketchup. Mix well and finish with some garam masala and coriander leaves. Your frankie filling is ready.
7.Take a roti, sprinkle some cumin powder and chaat masala and spread the vegetable mixture. Roll it up and devour!
